• 1-1/2 cups all-purpose or pastry flour
  • 2 tsp baking powder
  • 1 tsp sugar
  • 1 tsp salt
  • 2 eggs
  • 1-1/4 cups milk
  • 3 Tbsp oil

Sift flour, baking powder, sugar, and salt into a bowl. Add remaining ingredients. Using a mixer at medium speed, mix until ingredients are combined, about 30 seconds. Stop and scrape the bowl. Turn to medium speed again and beat until smooth, about 15 seconds.

Slowly heat un-greased griddle or heavy skillet. Use 1/3 cup of batter for each pancake. Cook until bubbles form on the surface and the edges become dry. Flip; cook until golden brown on the underside.

Makes about 8 6-inch pancakes
