Not the traditional St. Patrick’s Day meal, still one of our favorites for the holiday. Will fit in a 4 quart, or larger, Crock Pot.
- 6 potatoes, quartered
- 3 medium onions, quartered
- 1 cup thinly sliced carrots
- 3-4 lbs corned beef brisket
- 1 cup beer (Guinness is popular, but Ben prefers Budweiser)
Place vegetables in bottom of slow electric crockery cooker. Trim fat from corned beef; place meat atop vegetables. Pour beer over all. Cover and cook on low-heat setting for 8 hours, or till done. Serve meat with vegetables. Reserve broth for a vegetable soup.
